Vegan Chocolate Chip Cookies

Absolutely amazing!!! Seriously better than any conventional chocolate chip cookie I have ever made (EVER). Fabulous, so fabulous, and you soooo have to make them yourself!! You will love them, I am so sure of it!! I made the cookies last night for my small group and everyone loved them!!

I got this recipe from the Vegan Issue of the Dessert Magazine I had mentioned before...




1 cup unbleached all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup sugar
1/4 tsp salt
1/3 cup maple syrup
1/4 tsp dark molasses
1 tsp vanilla extract
1/4 cup (generous 1/4 C) canola oil
1/3 cup vegan chocolate chips

Preheat oven to 350 degrees F.

In a bowl, sift in the flour, baking powder, baking soda, sugar, and salt. Stir until well combined. In a separate bowl, combine the maple syrup, molasses, and vanilla. Then stir in the oil until well combined.

Add the wet mixture and chocolate chips to the dry mixture and stir until just well combined. Place large spoonfuls of the batter on a baking sheet sprayed with non-stick cooking spray. Flatten a little. Bake 11 minutes, until just golden brown. Let cool on the sheet for a minute and then transfer to a cooling rack.

Makes 8-10 large cookies.
