Fusion

I'm in a Fusion group this Fall with Buckhead Church.  What is Fusion?? Well, it's a smaller group (50-100) singles in my area of town and in my age group that get together outside of church either on Sunday for the group or other days of the week for socials and have a lot of fun.  A great way to get to meet new people and shrink the size of the church. I had a great time as a volunteer for F1 (or Fusion #1).  I got to greet people as they came thru the door and hand them a paper to play human bingo.  Everyone was so talkative and social... how much fun! And it was great to see existing friends and new ones.

And then on Wednesday we met again for our first social at Fellini's Pizza.  I, of course, had a slice of cheeseless pizza and great conversation with the people who sat around me.

VJ & ME

It has taken forever for VJ and I to find a time that works for each of us to get together however we made it happen spontaneously last Saturday.  We had a great time watching football first at Taco Mac then at Hudson Grill.  Even had a quick second for a photo op...

Chicken and Butternut Squash (cheeseless) Lasagna

First, I must start by saying... I FORGOT TO TAKE A PICTURE!!! Can you believe it.  I did.  And, searching the internet quickly to see if I could find something that would come close however nothing came up...  So, just imagine how good this was!! haha!!

And, I made this for Erinleigh, George, and Richard.  They all really liked it!  I thought that there could have been a few changes so I'm going to post what I think it should have had in with what I actually made. 

Chicken and Butternut Squash Lasagna

1 package no cook lasagna noodles
1 medium butternut squash, peeled and thinly sliced with a mandolin
2 medium red onions, thinly sliced with a mandolin
1 container sliced mushrooms
1 cup frozen spinach, defrosted & squeezed dry
2 breasts of chicken, cooked and diced
1 Tbs. nutritional yeast (optional)

For the sauce:
2 tablespoons unsalted butter
4 teaspoons flour
1 1/4 cups low fat almond milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pinch ground nutmeg
2 jars spaghetti sauce



To make the bechamel sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.  Add the spaghetti sauce to combine and remove from heat.

Pre-heat oven to 425 degrees.  Spray a 9 x 13 inch glass pan with cooking spray.

Using a sheet tray lined with aluminum foil, spray the foil with cooking spray and add the onions.  Spray the onion with cooking spray and mix to combine.  Add salt and pepper.  Roast the onions stirring every 15 minutes until browned (about 45 minutes).

Layer a little bit of sauce on the bottom of the 9 x 13 inch pan. Add one layer of noodles.  Top with sauce, onion, butternut squash, mushrooms, and spinach.  Continue layering until all of the ingredients are used up.  Finish with sauce and nutritional yeast, if using. 

Cover pan with aluminum foil and bake for 45 minutes.

Mexican (cheese-free) lasagna!

What about the food!! Right?? It's been a while since I have posted any good food entries.  And this one was amazing!! I loved it. 

I made this Monday for Erinleigh, George and Richard... however, my car decided to break down so I couldn't drive out to their house.  EL came my way so she and I ate with Jennie and I sent EL home with the left overs for the guys.  EL is about to have her baby so any spice is no bueno so I left out any chili power or red pepper flakes or jalapeno... things that are generally a staple in my cooking... so feel free to add them in if you want it spicier.  This was very flavorful though!!


Kristie's Enchilada (cheese-free) Lasagna


5 flour tortillas, cut into wedges
5 corn tortillas, cut into wedges
1 tsp olive oil
1 large sweet onion, diced
1 green pepper, diced
3 garlic cloves, minces
1 zucchini, chopped
2 yellow squash, chopped
1 cup corn 
1 tbsp cumin
black pepper
2 cups black beans
2 cups BBQ chicken, diced
1 28 oz can diced tomatoes
1 10 oz can enchilada sauce

Preheat oven to 375 degrees.

In a pan on medium high heat, saute the olive oil, onion, green pepper, garlic, zucchini, and yellow squash for about 3 minutes.  Add the corn, cumin and black pepper.  Saute 3 minutes more. Take off the heat and add black beans, chicken, and tomatoes.

Spray a 9x13 glass pan with cooking spray.  Layer the flour tortilla wedges along the bottom to cover the pan.  Add 1/2 the chicken mixture.  Add 1/2 can of enchilada sauce (spread with a spoon if necessary).  Layer the corn tortilla wedges on top.  Add the remaining chicken mixture and remaining enchilada sauce (spread with a spoon again if necessary).

Cover pan with aluminum foil.  Cook for 40 minutes.  Remove the foil and cook 10-15 minutes more.

I went to my first Braves game of the year.  I know, I know... their season is almost over.  So at least I got to go once :)  The Braves lost badly to the Nationals, however I had a blast hanging out with some new friends.

Busy as a bee

I've been busy.  So of course there has been a lax in posting.   Basically, when I have down time... oh wait, that hasn't been able to happen.  I can't complain though as I have enjoyed everything I have been doing.  Well, except for the laundry I did today. 

Jennie, Preston and I are fully moved in and coming to a routine.  This weekend our power was shut off because of an issue between our management company and the power company however management put Jennie and I up in a hotel room for the night, took care of Preston, and helped us move our food to an empty unit so I can't complain too much.  It did take a chunk out of the weekend however we got a free breakfast at the hotel out of the deal...  and last night Teesha and Joel came over to the hotel to chat and catch up.  I keep looking at the 4 of us in the hotel room, chatting and acting like everything was normal.  And I realized again how lucky I am.  That home for me is not in 4 walls but in my friends who I have surrounding me.  I feel so blessed to have such amazing friends (and one fabulous roommate)!!  And that God provide for me wherever I am.  He can always find me.  Even in a hotel about 2 miles from where I currently call home. 

Last weekend I drove down to Destin, Florida for Labor Day Retreat with my church.  I can't say enough great things about the time we spent down there.  Weather was beautiful!! Perry Noble was the speaker and he rocked our socks off!!


The beach was fantastic!! The socials were great, the food was good, and I had an amazing time catching up with Abby and LeAnn, as we drove there and back together and Abby made me lunches.


I also got to connect with a few guys I've meet throughout the summer at different events and met some new people as well.  I felt so blessed being there.  And, I've uploaded the photos here...

Woa Batman

Wow!! Have I ever been busy.  I thought I would just let you know that I have MOVED into a new place and I now have a ROOMMATE!!! This is the first time in my entire life that I have had a roommate and 5 days in, I love it!! Jennie is my new roommate, you probably know a lot about her already as she and I hang out quite a bit and she was one of the hosts of my surprise birthday party!
