This is why...

I don't know if you noticed in the pics I uploaded yesterday but I have gained some weight recently.  Don't try to be nice and tell me you didn't see it... haha!  Well, I know exactly why I have... HAPPY 30th BIRTHDAY TO ME!

I could also have titled this 30 and FABULOUS!! haha!!!  I'm very excited to enter this new decade of my life.  I mean, I don't have a choice, so why not be excited right??!!!?!?

SURPRISE!!!!

I feel so blessed!!! I have the best friends... seriously, the best!!! Jennie & Teesha put together a surprise party for me this weekend and they got me good!! 


They told me they were both too busy to actually plan the day so it was just going to be the 3 of us for dinner.  Jennie spent Thursday asking me all sorts of questions about what I want to do, where I'd want to go.  Then on Friday Teesha had to "work late" so she would just meet us at dinner.  And the weather changed what we had decided to do the day before so they made an executive decision to go to Eclipse De Luna

Friday night Jennie was text messaging Teesha who was "at work" to find out when she would be able to get out to meet us so we had a drink at happy hour at the condo. 



Then she got the text that Teesha was ready to meet us so we headed over.  As we walked into Eclipse there was someone at the bar who looked familiar however they were facing the other direction.  Next I hear Jennie say, "there's Teesha"  and then I hear "SURPRISE!!!!!"  It took me a minute to put it all together but I was completely surprised!!!  So many of my friends had gathered to celebrate my birthday.  And as this weekend has progressed I've heard more and more stories of people who were in cahoots with Teesha and Jennie!! 



I haven't quite decided if its a good thing or a bad thing that my friends are so good at lying to me... haha!!!

I had a blast at dinner, the company was amazing, the food was spectacular, and I felt so loved!!! THANK YOU!!!!

Pickled Okra

I was at the Peachtree Road Farmer's Market a few weekends ago and watched a chef demonstration from the chef and the head mixologist at JTC Kitchen.  The mixologist made Pickled Okra and thank goodness they gave out the recipe.  I mixed it up a little bit but only a little bit and made my own.  My parents, Jennie and I loved it.  Jennie and I loved it so much that I've made a second batch and Jennie has made a batch of her own as well.

Have I become southern or what...

Pickled Okra


50-60 pieces of okra
1 quart apple cider vinegar (or white vinegar)
1 cup water
1/2 cup salt
1 1/2 t mustard seed
1 t dill (or fennel seed)
4 cloves garlic
4 Cayenne chilies (or any other small red chilies)

Wash okra well and trim tops, leaving caps on.
Sterilize jars using a boiling water bath.
Place okra in jars.  Add seeds, garlic and chilies to jar, splitting evenly if using small jars.
Bring vinegar, salt and water to a boil.  Pour over okra in jars to cover.
Place lids tightly on jars.  If putting up, place in boiling water bath to seal, according to jar-maker's instructions.  If not sealing, refrigerate and use within a week.

Post-Skydiving Range Shooting

What better way to cap off a great Saturday of skydiving than to go to the range!  Haha!!! Bennett joined my parents, Zach and me for a fun hour shooting guns...

What else did my parents and I do this weekend???  Well, we went to Fat Matt's Thursday night and then just hung out at the apartment.  Jennie and Jeff stopped by for a few cocktails on the roof.

Rise-N-Dine was for brunch on Friday and ran into Marcus on his lunch break.  We all really liked Rise-N-Dine!! It was yummy!! Then we spent the day shopping and finished out the night with dinner at Via with Jennie.  Via was horrible... save yourself and don't go!! 

Saturday was skydiving, shooting, and the dinner at Fox Brother's BBQ.  I am so excited about shooting... my Dad bought me a Smith & Wesson .22 revolver so I was practicing with that.  Dad and I were also able to shoot Zach's 9mm and rifle and Bennett's 45.  We had a blast shooting all the different guns. Dinner was with Bennett, Marcus, Marthalynn and Julia.  I hadn't been to Fox however I've heard only good things about it.  In my opinion, it doesn't beat Fat Matt's for ribs however it did for the sides!

Sunday after church my parents and I went to Panahar for their first Bangladeshi experience.  And they really liked it!! Of course I did too... but it wasn't my first experience!  Haha!! We ran some errands during the day and then hung out on the roof before a major storm blew in and we went to Pizzeria Venti with Jennie for dinner.

It was another fun weekend with the parents!! Preston was very happy they were in town too... they do a great job at spoiling him!!!  Hahah!!

My First Skydive!!!


Sooooo... I've got all the pictures uploaded and have the video ready to go...


Check me out!! Haha!! I had a blast jumping with my friend Zach and my tandem partner Liam.  If you are in the ATL area and want to go skydiving go to Skydive Monroe.  I had a blast!!!  And what made it even better... my parents were able to watch!!

Before going my mom was terrified however once she saw the facility, the plane, how they pack the shoot, spoke to the skydivers, etc she was fine.  When we first got to Monroe there were a bunch of clouds, which pushed back every one's jumps a few hours but we were then able to watch 2 other groups of people go before we went.  That was fun to see!!! Around 1pm we were finally able to jump and man was it fun!! I was shocked at how not nervous I was.  I couldn't believe it.  But, I guess that's a good thing.


Maybe I'll get to go again!  Now if I can only talk my parents into going with me...

Kristie's Asian Soup

Jennie and I decided to stay in instead of go out last night.  Which worked cause it gave me an excuse to make a soup I have been wanting to try.  Actually, I have been wanting to make this soup, however I used up the  mushrooms yesterday so I used the essence of the soup and made something completely different.

Kristie's Asian Soup


4 cups chicken stock (made from this post)
1 tbsp olive oil
3/4 yellow onion, finely diced
1 carrot, finely chopped
3 garlic cloves, minced
1/4 tsp chili powder
1/4 tsp all seasoning mix
pinch of red pepper flakes
pinch of paprika
2 celery stalks, finely chopped
2 chicken breasts, cooked and diced
1/3 cup frozen peas
1/2 cup frozen lima beans
10 frozen vegetable dumplings (from the H Mart)

In a medium or large sauce pan over medium-high heat, warm the chicken stock.

In a medium skillet, heat the olive oil over medium high heat.  Add onions.  Saute 3 minutes and add the carrots.  Cook until the onions are translucent (about 2 more minutes).  Add the celery, garlic and spices.  Cook 3 more minutes.  Transfer all to the sauce pan.

Add the chicken, peas, lima beans and dumplings.  Cook until the dumplings are tender and float to the top.

Being Creative with Food

So, I had a few recipes that I had parts of the ingredients for them and I wanted to put together the food for Erinleigh and George early so I decided Sunday night that I would make my food for the week. Here are some Kristie originals.

Eggplant Casserole with Panko Crust



2 tablespoons olive oil
1/2 cup veggie stock
1 1/2 medium eggplants, diced
1 carrot, chopped
1 yellow onion, chopped
1 container portobello mushrooms, chopped
1 rib celery, chopped
4 garlic cloves, minced
1 teaspoon seasoning mix
1 can no-salt added tomatoes
3 cups cooked white rice
1 whole lemon pepper chicken from Publix, skin removed and diced
1 tomato, diced

1/2 cup panko (Japanese-style bread crumbs)
1 tablespoon dried parsley
1/2 tablespoon paprika
1/2 tablespoon dried basil

Preheat oven to 400 degrees.
In a large skillet, heat olive oil over medium high heat and cook eggplant until it starts to become tender (about 5 minutes). As the eggplant cooks it will soak up the olive oil, add veggie stock, as needed, and cover to keep the pan moist. Add the carrots and cook for 3 more minutes. Add onion, cook until almost translucent and add garlic and seasoning mix (whatever mix you like best). Cook for 5 more minutes then turn off heat. Add tomatoes, rice, chicken, and tomato, stir to combine.

Combine panko, parsley, paprika, and basil in a small dish.

Put eggplant mixture in a casserole dish. Sprinkle bread crumbs over the top and bake until golden brown and hot throughout, about 30 minutes.



When I made the above, I had about 1 1/2 cups left over eggplant that wouldn't fit in my casserole dish so I made some soup and used it in there...

Kristie's Butternut Squash Soup




1 tablespoon olive oil
1/4 cup veggie stock
1/2 eggplant, diced
1 sweet onion, diced
2 cloves garlic, minced
1 1/2 cups leftover eggplant mix from recipe above
1 container Trader Joe's Organic Low-Sodium Butternut Squash Soup
1 lemon grass stalk

In a medium sauce pan, heat olive oil over medium high heat and cook eggplant until it starts to become tender (about 5 minutes) stirring regularly. As the eggplant cooks it will soak up the olive oil, add veggie stock, as needed, and cover to keep the pan moist. Add onion, cook until almost translucent. Add garlic, cook about 3 minutes.

Turn down the heat to medium low, add the eggplant mixture, the soup, and lemon grass. Cover and cook until heated thru. Before serving remove the lemon grass stalk and discard.


Uber Easy Chicken Stock
Leftover chicken bones from the eggplant casserole dish
Water
Whole Peppercorn

Once all the meat had been removed I put the bones in a medium sauce pan, covered with water, and added a few whole peppercorns. Cover, cook on medium-high until it starts to boil. Turn down to low and cook 30-45 minutes. Remove from heat, strain, and your done! :)

Cambodia 2010


It's beginning to look a lot like... Christmas (in July)!!!  Which for all who know me well, know this is my favorite time of year!!  Does this feel like deja vu??  Yep! I’m going back!!!  I was so fortunate to go to Cambodia last year and ecstatic that I’ve been chosen to go back again this year!!



First I want to say thank you so much for all the support you have given to me already in prayers and love.




As a member of the Cambodia team, I will have the opportunity to partner with New Life Church as they love and encourage the children at their orphanage. By creating a fun, relational environment, I will have the privilege of teaching these children about God, building friendships, and most of all, showing them that our team cares for them.



And I can’t do this alone.  I need your help (again).  Please prayerfully consider partnering with me in this journey.  I will need your help in two ways.



First, thru prayer.  My prayers are:

  1. Our team will be unified
  2. We will endure safe travel
  3. The children and community will be receptive to us and Christ
  4. God would use me as a way to share His love
  5. Through this amazing experience, I will continue to grow in my faith.
