I made this salad the other night. I didn't want to cook much but I didn't mind dicing up a few things. It turned out to be amazing!!!
Orange Cous Cous Salad
1 cup cous cous, cooked
1 orange, segmented
1 chicken breast, cooked & cubed
1/2 cucumber, diced
1/2 tomato, diced
2 tbsp fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 avocado, diced
1/2 carrot, diced
salt & pepper
1/2 lime, juiced
2 tbsp yogurt
Mix all ingredients together. Enjoy!
